Atkins Low carb Spaghetti |
Ingredients: |
3 lbs. spaghetti squash
l Tbs butter
1/4 lb. Italian ham in thin strips
1 Cup heavy cream
1/4 Cup Parmesan cheese
Pepper |

Preparation Method: |

- Heat oven to 350 degrees. Butter a 13 x 9 baking dish. Cut squash in half and scoop out seeds. Bake, cut side down 45 minutes or til tender. Scrape squash our of shell and drain in colander.

Melt butter in large skillet.

- Add ham and saute for 1 minute. Add pepper and cream. Cook, stirring 2-3 minutes until thick. Add squash and stir to blend.

- Sprinkle with Parmesan cheese and toss.
