Chocolate Chunk Cookies |
Ingredients: |
1-1/4 cup ground Almonds
1 cup Designer Whey protein Powder (Vanilla Praline)
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1 egg
2 egg whites
2 tsp vanilla, I also added some Butterscotch flavoring
14 Tbsp unsalted butter
2 T canola oil
1-1/2 c Splenda
3 Tbsp Brown Sugar Twin (Canadian variety with cyclamates)
4 Carbolite Dark Chocolate Bars (I used 1 large (3.0 oz) Doctor's Lowcarb
Diet Chocolate Bar (Dark Chocolate)
1 cup chopped walnuts or pecans

- Combine ground almonds, protein powder, baking powder, baking soda and
cinnamon. Mix and set aside. Mix egg, egg whites and flavorings in another
bowl. Melt and cool butter in large bowl, add oil, and set aside.

Chop candy bar. Add Splenda and Brown Sugar Twin to butter and oil, mix and
stir , then add egg mixture and stir briskly Add dry ingredients and mix
well, then add chocolate chunks and nuts.

Drop large spoonsful onto parchment paper and bake at 350 degrees for 10
minutes.
